The SANS SEC503 "Intrusion Detection In-Depth" course makes extensive use of Snort and spends a lot of time digging into configuration, analysis of events, reading packets, writing signatures, etc.  There is an optional GCIA (GIAC Certified Intrusion Analyst) certification exame.
